胡蒋宁: 博士、教授、博士生导师。 国家海洋食品工程技术研究中心营养组负责人。入选辽宁省“兴辽英才计划”青年拔尖计划,辽宁省“百千万人才工程”培养对象,江西省“井冈之星”青年科学家。目前担任Journal of Agricultural and Food Chemistry,Food Chemistry,Journal of Food Science, Pharmaceutical Biology 等国际学术期刊杂志审稿专家及Foods、Food & Nutrition Journal 等英文学术期刊编委。2009年韩国Chungnam National University食品科学专业博士毕业。2013至2014年加拿大University of Saskatchewan 从事博士后工作。2009年进入南昌大学生命科学与食品工程学院食品科学与技术国家重点实验室工作。2018年份调入大连工业大学国家海洋食品工程技术研究中心。


主要研究方向:食品中功效物质发掘及其营养健康研究,近五年聚焦食物资源中功效因子,建立了完善的功效因子高效制备体系,建立了针对肠道功能紊乱,糖脂代谢调控等食品功能因子筛选平台,基于精准营养策略,构建具有靶向作用食源性纳米粒子及水凝胶营养递送体系,实现功能因子体内有效递送,并通过系统深入研究,开发相关功能食品。目前已在Advanced Science,Biomaterials, Advanced Healthcare Materials, ACS AMI, Biomacromolecules等国内外学术期刊发表学术论文100 余篇,申请公开国家发明专利14项,已授权6项。先后主持十余项国家省部级项目包括“十四五、十三五国家重点研发计划”课题及3项国家自然科学基金项目等。获得辽宁省自然科学二等奖,美国油脂化学协会(AOCS)“Certificate of Merit”奖;韩国食品协会举第四届国际功能食品会议International Conference on Food Factors “Travel Grant Award奖项”。
